  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk (unsweetened almond milk, oat milk, regular dairy milk, soy milk, or cashew milk)
  • 2 large eggs (or 2 flax eggs)
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 23 medium apples (Granny Smith, Honeycrisp, or Fuji), peeled and diced into 1/2-inch cubes
  • Optional: chopped walnuts or pecans, dried cranberries or raisins

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Peel, core, and dice the apples into uniform 1/2-inch pieces and set aside.
  3. In a large mixing bowl, whisk together the oats, baking powder, cinnamon, and salt.
  4. In a separate medium bowl, whisk together the milk, eggs (or flax eggs), maple syrup, brown sugar, and vanilla extract until smooth.
  5. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just moistened. Fold in the diced apples and any optional nuts or dried fruit.
  6. Transfer the mixture to the prepared baking dish and spread it out evenly. Optionally, sprinkle a little extra cinnamon or brown sugar on top.
  7. Bake for 35-45 minutes until the top is golden brown and the edges are set. If it browns too quickly, tent with foil for the last 10-15 minutes.
  8. Allow to cool for 10-15 minutes before serving.
