Beef Kielbasa with Roasted Potatoes, Peppers, and Garlic Herb Oil

  • 1 lb (450g) kielbasa (smoked sausage), cut into 1-inch pieces
  • 1.5 lbs (680g) baby Yukon Gold potatoes, quartered
  • 1 large red bell pepper, sliced into strips
  • 1 large yellow bell pepper, sliced into strips
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ¼ cup (60ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon fresh parsley, finely chopped (or ½ teaspoon dried parsley)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons)

Instructions

  1. Preheat your oven to 425°F (220°C). This high heat will help create that perfect crispy texture on the potatoes and sausage.
  2. In a large mixing bowl, combine the quartered baby Yukon Gold potatoes with 3 tablespoons of olive oil, kosher salt, black pepper, smoked paprika, and garlic powder. Toss until the potatoes are evenly coated. This step is crucial for flavor!
  3. Spread the seasoned potatoes evenly on one side of a large baking sheet. Make sure they are in a single layer for optimal roasting — overcrowding can lead to steaming instead of roasting.
  4. Add the cut kielbasa to the bowl you used for the potatoes, drizzling with a little more olive oil if needed. Toss to coat, then add the kielbasa to the other side of the baking sheet, keeping it separate from the potatoes.
