  • 23 carrots, chopped into rounds or chunks
  • 23 stalks celery, sliced
  • 1 yellow onion, diced
  • 23 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 1 tablespoon non-alcoholic red wine alternative or balsamic vinegar diluted with extra beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of garlic powder or onion powder (optional)
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. If your beef ham is a large piece, you can leave it whole or cut it into 2-3 large chunks for easier serving.
  2. Peel and cube your potatoes, chop your carrots, slice the celery, dice the onion, and mince the garlic.
  3. Layer the cubed potatoes at the bottom of your slow cooker insert.
  4. Scatter the chopped carrots, celery, onion, and minced garlic over the potatoes.
  5. Place your beef ham pieces on top of the vegetables.
  6. Pour the beef broth over everything in the slow cooker. If using a non-alcoholic red wine alternative, balsamic vinegar, or cranberry juice, add it now.
  7. Sprinkle the dried thyme, rosemary, black pepper, and any additional garlic or onion powder evenly over the ingredients. If using Dijon mustard, stir it into the broth before pouring it over.
  8. Cover your slow cooker and set it to your desired cooking setting. For low, cook for 6 to 8 hours, or for high, cook for 3 to 4 hours.
  9. Once the cooking time is up, gently test the potatoes with a fork to ensure they are tender. The beef ham should be falling-apart tender or very easy to slice.
  10. Give the dish a taste and adjust seasoning with more salt or pepper if needed.
  11. Carefully remove the beef ham from the slow cooker and shred or slice it. Spoon the potatoes and vegetables alongside, with plenty of the delicious broth.
