  • Hoagie Rolls or French Bread

Instructions

  1. Trim and season the chuck roast with salt and black pepper.
  2. Optional: Sear the beef on all sides in a hot skillet with a little oil.
  3. Layer sliced onions and minced garlic at the bottom of the crockpot.
  4. Place the seasoned beef roast on top of the onions and garlic.
  5. Pour in the beef broth, Worcestershire sauce, and soy sauce.
  6. Add the bay leaf, sprinkle in the dried thyme, and stir in the onion soup mix.
  7. Cover and cook on LOW for 8 hours or HIGH for 4-6 hours until the beef is tender.
  8. Remove the beef from the crockpot and shred it using two forks.
  9. Return the shredded beef to the au jus in the slow cooker and let it warm through for 15-30 minutes.
  10. Prepare the rolls by slicing them lengthwise, buttering the insides, and toasting them until golden brown.
  11. Load the toasted rolls with the warm shredded beef.
  12. Optional: Add slices of provolone or Swiss cheese and broil until melted.
  13. Serve with hot au jus for dipping.
