Ingredients

Scale
  • 1 pound ground chicken
  • 1 cup breadcrumbs (preferably seasoned)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 2 cloves garlic, minced
  • 1/2 cup buffalo wing sauce (plus extra for topping)
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 cup crumbled blue cheese
  • 1/4 cup buffalo wing sauce (for topping)
  • 1/4 cup crumbled blue cheese (for topping)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) to ensure it's hot and ready for baking.
  2. In a large mixing bowl, combine 1 pound of ground chicken, 1 cup of breadcrumbs, 1/2 cup of finely chopped onion, and 1/2 cup of finely chopped celery. Use your hands to mix gently until just combined; overmixing can lead to a tough meatloaf.
  3. Add the minced garlic, 1/2 cup of buffalo wing sauce, 1 large egg, 1 teaspoon of Worcestershire sauce, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of dried basil, and 1 teaspoon of dried oregano to the mixture. Again, mix until everything is well incorporated, but don’t overwork it.
  4. Carefully fold in 1/2 cup of crumbled blue cheese, ensuring it’s evenly distributed throughout the meat mixture.
  5. Transfer the mixture to a greased loaf pan, shaping it into a loaf. Smooth the top with a spatula for an even surface.
  6. For the topping, drizzle 1/4 cup of buffalo wing sauce over the top of the meatloaf. Sprinkle with an additional 1/4 cup of crumbled blue cheese for a cheesy crust.
  7. Bake in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (75°C). The edges should be golden brown and the sauce bubbling slightly. A common mistake is to undercook the meatloaf, so use a meat thermometer for accuracy.
  8. Once done, remove from the oven and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute, making each slice juicy and flavorful.
