- 1 head green cabbage
- 1 pound lean ground beef
- 1 cup sharp cheddar cheese
- 1 cup Monterey Jack cheese
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- Salt to taste
- Olive oil for cooking
- Preheat your oven to 350°F (175°C).
- Remove the core from the cabbage and chop it into bite-sized pieces. Rinse it under cold water and set aside to drain.
- In a large skillet over medium heat, add a splash of olive oil and then the ground beef. Cook until it's browned, breaking it apart with a spatula as it cooks. Drain any excess fat.
- To the browned beef, add chopped onions and minced garlic. Sauté until the onions are translucent, about 3-5 minutes.
- Stir in the tomato sauce, chili powder, cumin, salt, and pepper. Let it simmer for about 5 minutes to meld the flavors together.
- In a large mixing bowl, combine the cabbage with the beef mixture. Toss until the cabbage is well coated with the sauce and meat.
- In a greased 9×13-inch baking dish, spread half of the cabbage mixture. Sprinkle half of your cheese on top. Repeat with the remaining cabbage mixture and finish with the rest of the cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After that, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Once baked, let the casserole cool for about 10 minutes before serving.
