This hearty Chunky Beef Hamburger and Macaroni Soup combines rich flavors of beef and pasta, making it the perfect comfort food. It’s easy to prepare and ideal for busy weeknights or cozy weekends.

Ingredients

  • Ground Beef
  • Macaroni
  • Diced onions
  • Carrots
  • Celery
  • Bell peppers (optional)
  • Zucchini (optional)
  • Beef broth
  • Tomato Sauce (or canned diced/crushed tomatoes)
  • Minced garlic
  • Italian seasoning
  • Red pepper flakes
  • Salt
  • Pepper
  • Sugar (optional)
  • Fresh parsley (for garnish, optional)
  • Grated cheese (for garnish, optional)

Instructions

  1. In a large pot, add a splash of oil and heat over medium-high. Add the ground beef, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in the diced onions, carrots, and celery. Cook for about 5 minutes until the vegetables begin to soften.
  3. Add minced garlic, Italian seasoning, and red pepper flakes. Stir and cook for another minute until fragrant.
  4. Pour in the beef broth and add the tomato sauce (or diced/crushed tomatoes). Stir well to combine.
  5. Increase the heat until the mixture reaches a simmer. Reduce the heat to low and let it cook for about 10 minutes, allowing the flavors to meld.
  6. Stir in the macaroni and cook according to package directions, usually about 8-10 minutes, until al dente.
  7. Check the seasoning and adjust with salt and pepper as needed. If you like a thicker soup, let it cook a little longer without the lid.
  8. Ladle the soup into bowls and garnish with fresh parsley or grated cheese if desired.
