Instructions

  1. In a large mixing bowl, beat the room temperature unsalted butter on medium speed until smooth and creamy, about 1 minute.
  2. Gradually add the granulated sugar and continue to beat on medium-high speed for 3-5 minutes, until light in color and fluffy.
  3. Reduce the mixer speed to low. Add the room temperature egg and vanilla extract to the creamed mixture and beat until just combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. With the mixer on low speed, gradually add the dry ingredient mixture to the wet ingredients, mixing only until the flour is just incorporated.
  6. Divide the dough into two equal portions, flatten each into a disk, wrap tightly in plastic wrap, and refrigerate for at least 1-2 hours, preferably overnight.
  7. Preheat your oven to 375°F (190°C) and line several baking sheets with parchment paper.
  8. Remove one disk of chilled dough from the refrigerator, lightly flour your work surface and rolling pin, and roll out the dough to 1/4-inch thickness.
  9. Using cookie cutters, cut out shapes and transfer them to the prepared baking sheets, leaving about 1 inch between cookies.
  10. Bake for 7-10 minutes, or until the edges are lightly golden and the centers still look pale.
