Ingredients

Scale
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened (2 sticks)
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 4 cups powdered sugar
  • 3 tablespoons meringue powder
  • 56 tablespoons water (adjust as needed)
  • Food coloring (various colors for decorating)
  • Sprinkles (various shapes and colors)
  • Edible glitter (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). This ensures that the cookies bake evenly and become perfectly golden.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set this dry mixture aside while you prepare the wet ingredients.
  3. In another bowl, cream the softened butter and white sugar together using an electric mixer on medium speed for about 2-3 minutes until the mixture is light and fluffy.
  4. Add the egg, vanilla extract, and almond extract to the butter-sugar mixture, mixing on low until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto ungreased baking sheets, leaving about 2 inches between each cookie.
  7. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden, while the centers remain soft.
  8. Once baked, let the cookies cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
  9. While the cookies are cooling, prepare the royal icing by mixing the powdered sugar, meringue powder, and water until it reaches a thick but spreadable consistency.
  10. Divide the icing into bowls and add your desired food coloring to each, mixing until fully incorporated. Now comes the fun part—decorating your cookies with the colorful icing, sprinkles, and edible glitter!
