Instructions

  1. In a medium bowl, combine 1 cup cottage cheese and 1 large egg. Whisk thoroughly until smooth.
  2. Gradually fold in 1 cup flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder. Mix until just combined.
  3. Heat 1 tablespoon olive oil in a non-stick skillet over medium heat. Scoop about 1/4 cup of the flatbread mixture into the skillet and spread it gently into a circle, about 1/4 inch thick. Cook for 3-4 minutes on one side until bubbles form and edges look set. Flip and cook for an additional 2-3 minutes until golden brown. Repeat with the remaining mixture.
  4. In another skillet, heat 1 tablespoon olive oil over medium heat. Add 1 small finely chopped onion and sauté for 3-4 minutes until translucent.
