Creamy Beef Kielbasa Cheesy Potato Casserole Bake

  • 1 good quality pre-cooked smoked beef kielbasa, sliced into ½-inch thick half-moon pieces
  • 45 Yukon Gold potatoes, peeled and thinly sliced into uniform ⅛-inch thick rounds
  • 1 medium yellow onion, finely diced
  • 34 cloves of garlic, minced
  • 1 cup sharp cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 tablespoon olive oil or butter
  • 1 teaspoon smoked paprika
  • 1 teaspoon dry mustard powder or 1 teaspoon Dijon mustard
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Slice your beef kielbasa into ½-inch thick half-moon pieces.
  3. Peel (if desired) and thinly slice your potatoes into uniform ⅛-inch thick rounds.
  4. Finely dice your onion and mince the garlic.
  5. Grate your cheeses and set aside.
  6. In a large skillet or Dutch oven over medium-high heat, add a tablespoon of olive oil or butter. Add the sliced kielbasa and cook for 5-7 minutes, stirring occasionally, until it's lightly browned and slightly crispy. Remove the kielbasa from the skillet with a slotted spoon and set aside.
  7. Reduce the heat to medium. Add the diced onion to the same skillet and cook for 3-5 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant. Remove the onion and garlic from the skillet and set aside with the kielbasa.
  8. In the same skillet, reduce the heat to low. Add the heavy cream and the softened cream cheese. Stir constantly, whisking until the cream cheese is fully melted and the sauce is smooth.
  9. Stir in the smoked paprika, dry mustard, salt, and black pepper. Taste and adjust seasonings as needed. Remove the sauce from the heat.
  10. In a large mixing bowl, gently combine the thinly sliced potatoes, the browned kielbasa, and the sautéed onion and garlic.
  11. Pour the warm creamy cheese sauce over the potato and kielbasa mixture. Add about two-thirds of your grated cheese to the bowl. Toss everything together gently until all the potatoes and kielbasa are evenly coated.
  12. Transfer the entire mixture to your prepared 9×13-inch baking dish, spreading it out evenly.
  13. Sprinkle the remaining one-third of the grated cheese evenly over the top of the casserole.
  14. Cover the baking dish tightly with aluminum foil. Bake for 45-50 minutes with the foil on.
  15. Remove the foil and continue to bake for another 20-25 minutes, or until the potatoes are tender and the cheese on top is golden brown and melted.
  16. Once baked, remove the casserole from the oven and let it rest for 10-15 minutes before serving.
