Ingredients

Scale
  • 1 lb lean ground beef (85-90% lean)
  • 1 cup elbow macaroni
  • 1 can (28 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of sugar (optional)
  • 1 bay leaf (optional)
  • Olive oil, for cooking

Instructions

  1. Brown the Beef and Aromatics: In a large pot or Dutch oven, heat a little olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned. Drain any excess fat, then add the chopped onion and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  2. Build the Tomato Base: Stir in the tomato paste and cook for 1-2 minutes, stirring constantly. Pour in the crushed tomatoes and beef broth. Add the Italian seasoning, salt, pepper, and optional pinch of sugar. Stir to combine.
  3. Simmer and Cook the Macaroni: Bring the soup to a gentle simmer over medium heat. Add the elbow macaroni and stir well to prevent sticking. Cook according to package directions until al dente, about 7-10 minutes.
  4. Add the Creaminess: Once the pasta is cooked, reduce the heat to low and stir in the heavy cream slowly, stirring constantly. Heat gently for a few minutes until warmed through, avoiding a rolling boil.
  5. Taste and Serve: Taste the soup and adjust seasonings as needed. Ladle into bowls and garnish with your favorite toppings.
