  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon cream cheese or mascarpone
  • ½ cup shredded mozzarella or mild cheddar cheese
  • Salt
  • Black pepper
  • Pinch of Italian seasoning
  • Pinch of red pepper flakes
  • Fresh garlic cloves (minced)

Instructions

  1. Prep Your Chicken: Slice the chicken breasts horizontally to create four thinner cutlets. Pat them dry and season with salt, black pepper, and Italian seasoning.
  2. Cook the Pasta: Boil salted water, add twisted pasta, and cook until al dente. Reserve 1 cup of pasta water before draining.
  3. Sear the Chicken: Heat olive oil and butter in a skillet. Sear the chicken cutlets for 4-6 minutes per side until golden brown and cooked through. Remove and set aside.
  4. Build the Garlic Parmesan Sauce: In the same skillet, add more butter and minced garlic, sauté for about 1 minute until fragrant.
  5. Deglaze and Add Cream: Pour in chicken broth to deglaze the pan, scraping up browned bits. Stir in heavy cream and let simmer.
