Instructions

  1. Start by peeling and dicing about 4 large russet potatoes into small cubes. Chop one medium onion and set aside.
  2. In a large pot, cook 6-8 slices of beef bacon over medium heat until crispy. Once done, remove the bacon and let it drain on paper towels, leaving the drippings in the pot.
  3. Add the chopped onion to the pot with the bacon drippings and sauté until the onions are soft and translucent, usually about 5 minutes.
