  • Juice of two lemons
  • Lemon zest
  • Lemon pepper seasoning
  • Vegetable oil

Instructions

  1. Start by rinsing the chicken wings under cold water and patting them dry with paper towels.
  2. In a large bowl, combine the chicken wings with the juice of two lemons, a generous sprinkle of salt, and a couple of tablespoons of lemon pepper seasoning. Mix well to ensure each wing is coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.
  3. While the wings marinate, heat about 2 inches of vegetable oil in a deep pot or fryer to 375°F (190°C).
  4. Once the wings have marinated, remove them from the fridge. You can dust them lightly with a bit of flour, but I prefer to keep them simply seasoned for a cleaner lemon flavor.
  5. Carefully lower the wings into the hot oil in batches to avoid overcrowding. Fry them for about 8-10 minutes, turning occasionally until they are golden brown and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to absorb any excess oil.
  6. As soon as the wings are out of the oil, while they’re still hot, sprinkle a bit more lemon pepper seasoning and an extra squeeze of lemon juice over them.
