Instructions

  1. Prepare Your Slow Cooker: Lightly spray the inside of the slow cooker with non-stick cooking spray.
  2. Layer the Chicken: Place the boneless, skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker and season with salt, black pepper, and poultry seasoning.
  3. Whisk the Sauce: In a medium bowl, whisk together the cream of chicken (or mushroom) soup with the chicken broth until smooth. Mix in garlic powder or onion powder if desired.
  4. Pour Over Chicken: Carefully pour the soup and broth mixture evenly over the seasoned chicken.
  5. Add the Stuffing: Sprinkle the dry boxed stuffing mix evenly over the chicken and creamy sauce without stirring.
  6. Dot with Butter: Dot the top of the dry stuffing mix with small pieces of butter.
  7. Cook: Cover the slow cooker and cook on LOW for 4-5 hours or on HIGH for 2-3 hours until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  8. Serve: Once cooked, fluff the stuffing with a fork and shred the chicken if desired before mixing together.
