Ingredients

Scale
  • boneless, skinless chicken thighs
  • char siu sauce
  • fresh egg noodles
  • bell peppers
  • bok choy
  • carrots
  • sesame oil
  • green onions
  • olive oil (optional substitute for sesame oil)
  • hoisin sauce (for homemade char siu sauce)
  • honey (for homemade char siu sauce)
  • soy sauce (for homemade char siu sauce)
  • five-spice powder (for homemade char siu sauce)

Instructions

  1. In a bowl, combine 1/4 cup of char siu sauce with the chicken thighs. Let it marinate for at least 30 minutes, or up to overnight in the fridge for more flavor.
  2. Heat a tablespoon of oil in a large pan or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side until fully cooked and caramelized. Remove from the pan and let it rest before slicing it into thin strips.
  3. If using fresh noodles, cook them according to the package instructions, then drain and set aside. If using dried noodles, boil them in salted water until al dente.
  4. In the same pan, add another splash of oil. Toss in your diced bell peppers, sliced carrots, and chopped bok choy. Stir-fry for about 3-4 minutes until they are tender but still crisp.
  5. Add the cooked noodles to the pan with the vegetables. Pour in another 1/4 cup of char siu sauce and toss everything together to coat the noodles evenly.
  6. Finally, add the sliced char siu chicken to the noodle mixture. Stir everything together for another minute until heated through.
  7. Remove from heat and garnish with chopped green onions and a drizzle of sesame oil. Enjoy your homemade Char Siu Chicken Lo Mein!
