Instructions

  1. Start by washing and grating your chosen vegetables. Squeeze out excess moisture from the grated zucchini to prevent the patties from becoming too watery.
  2. In a large bowl, combine the grated vegetables, breadcrumbs, beaten egg (or substitute), and your chosen spices. Mix until everything is well incorporated.
  3. With your hands, shape the mixture into small patties, about 2-3 inches wide. You should be able to get around 8-10 patties depending on the size.
  4. In a skillet, heat some olive oil over medium heat. You want it hot enough that the patties sizzle when they hit the pan.
  5. Carefully place the patties in the skillet, ensuring not to overcrowd them. Fry them for about 4-5 minutes on each side until they are golden brown and crispy.
  6. Once cooked, place the patties on a plate lined with paper towels to absorb excess oil. Serve warm with your favorite dipping sauce or as a filling in a sandwich.
