Instructions

  1. In a medium saucepan, combine 2 cups of whole milk and 1/2 cup of heavy cream over medium heat. Stir occasionally until the mixture is warm but not boiling (about 3-4 minutes).
  2. Once the milk and cream are warm, reduce the heat to low. Add 1/2 cup of semi-sweet chocolate chips and 2 tablespoons of unsweetened cocoa powder. Stir continuously until the chocolate chips melt completely and the mixture is smooth (about 2-3 minutes).
  3. Now, add 2 tablespoons of brown sugar, 1 teaspoon of ground ginger, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/8 teaspoon of ground cloves to the chocolate mixture. Stir well until all the spices are dissolved and the hot chocolate is evenly flavored (about 1-2 minutes).
  4. Next, drizzle in 1 teaspoon of molasses for that authentic gingerbread flavor. Stir to combine, and taste the hot chocolate. Adjust sweetness if necessary by adding more brown sugar (this shouldn't take more than 1 minute).
  5. Once everything is combined and heated through (it should be steaming but not boiling), remove the saucepan from the heat. Pour the gingerbread hot chocolate into two mugs.
