  • 1/2 cup softened unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 tablespoons espresso powder
  • 2 tablespoons hot water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan with gluten-free flour.
  2. In a large mixing bowl, whisk together 1 ½ cups of gluten-free flour blend, 1/2 cup of unsweetened cocoa powder, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and a pinch of salt.
  3. In another bowl, combine 1 cup of granulated sugar with 1/2 cup of softened unsalted butter. Beat them together until light and fluffy. Then, add in 2 large eggs, 1 teaspoon of vanilla extract, and 1/2 cup of milk. Mix well.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  5. In a small bowl, dissolve 2 tablespoons of espresso powder in 2 tablespoons of hot water. Add this mixture to the batter and stir until evenly incorporated.
  6. Pour half of the batter into the prepared pan. Then, mix a couple of tablespoons of cocoa powder with a bit of leftover batter to create a chocolate swirl. Drop spoonfuls of the chocolate mixture on top of the plain batter and use a knife to gently swirl it together.
  7. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
