Instructions

  1. In a mixing bowl, whisk together 1 cup of all-purpose flour, 2 large eggs, 1 ½ cups of milk, and a pinch of salt until smooth. Let the batter rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and melt a little butter. Pour a ladleful of crepe batter into the skillet, swirling it to cover the bottom evenly. Cook for 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for another 1 minute. Repeat this process until all the batter is used, stacking the cooked crepes on a plate.
  3. In the same skillet, add a bit more butter and sauté 1 chopped onion until translucent.
