Delicious Strawberry Bread with Whipped Strawberry Butter

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup milk or buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup fresh strawberries, pureed
  • 1 cup powdered sugar
  • Pinch of salt (for the butter)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Wash, hull, and chop the fresh strawberries into small pieces (about 1/4 to 1/2 inch) and set aside.
  3. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.
  4. In a separate medium bowl, whisk together the eggs, vegetable oil (or melted butter), milk (or buttermilk), and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a rubber spatula until just combined, being careful not to overmix.
  6. Fold in the chopped strawberries gently to avoid crushing them.
  7. Pour the batter into the prepared loaf pan and bake for 50-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the bread from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
  9. For the whipped strawberry butter, ensure the unsalted butter is at room temperature.
  10. Wash and hull a handful of fresh strawberries, then finely chop and mash them to make about 1/4 cup of puree.
  11. In a medium mixing bowl, beat the softened butter on medium-high speed for 2-3 minutes until light and fluffy.
  12. Reduce the mixer speed to low and gradually add the powdered sugar, a pinch of salt, and vanilla extract, then beat until smooth.
  13. Fold in the strawberry puree and mix until just combined, then increase speed to medium-high for 30 seconds to fluff the butter.
  14. Taste and adjust sweetness if needed, adding more powdered sugar if desired.
