- ⅓ cup (65g) granulated sugar
- 3 tablespoons (45g) packed light brown sugar
- ¾ cup (170g) salted butter, melted
- 1 teaspoon (5ml) pure vanilla extract
- Pinch of salt (optional)
- 3 cups (400g) chopped fresh strawberries
- 2 tablespoons (25g) granulated sugar
- 1 tablespoon (9g) all-purpose flour
- ½ cup (60g) powdered sugar
- 1 tablespoon (15ml) light or heavy whipping cream
- ¼ teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang for easy removal later.
- In a medium bowl, whisk together 1 ¾ cups of flour, ⅓ cup granulated sugar, 3 tablespoons brown sugar, and a pinch of salt.
- Pour in ¾ cup of melted salted butter and 1 teaspoon of pure vanilla extract. Stir until the mixture forms coarse crumbs.
- Press two-thirds of the crumb mixture firmly and evenly into the bottom of your prepared pan. Bake this crust in the preheated oven for 15–20 minutes until it’s lightly golden.
- While the crust bakes, take 3 cups of chopped fresh strawberries and toss them in a bowl with 2 tablespoons of granulated sugar and 1 tablespoon of flour. Let this mixture sit for about 10 minutes.
- Once the crust is done, remove it from the oven and spoon the strawberry mixture evenly over the hot crust.
- Crumble the remaining crust mixture over the top of the strawberries. Bake for an additional 30–35 minutes until the top is set and bubbling around the edges.
- Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack.
- In a small bowl, whisk together ½ cup powdered sugar, 1 tablespoon of cream, and ¼ teaspoon vanilla extract until smooth. Drizzle this glaze over the cooled bars.
- Cut into 12 equal squares and serve.
