These Strawberry Shortcake Bars are a delightful twist on the classic dessert, featuring a buttery crumb crust and juicy strawberries topped with whipped cream. Perfect for summer picnics or cozy family gatherings, they are easy to make and bursting with flavor.

  • ⅓ cup (65g) granulated sugar
  • 3 tablespoons (45g) packed light brown sugar
  • ¾ cup (170g) salted butter, melted
  • 1 teaspoon (5ml) pure vanilla extract
  • Pinch of salt (optional)
  • 3 cups (400g) chopped fresh strawberries
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (9g) all-purpose flour
  • ½ cup (60g) powdered sugar
  • 1 tablespoon (15ml) light or heavy whipping cream
  • ¼ teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving an overhang for easy removal later.
  2. In a medium bowl, whisk together 1 ¾ cups of flour, ⅓ cup granulated sugar, 3 tablespoons brown sugar, and a pinch of salt.
  3. Pour in ¾ cup of melted salted butter and 1 teaspoon of pure vanilla extract. Stir until the mixture forms coarse crumbs.
  4. Press two-thirds of the crumb mixture firmly and evenly into the bottom of your prepared pan. Bake this crust in the preheated oven for 15–20 minutes until it’s lightly golden.
  5. While the crust bakes, take 3 cups of chopped fresh strawberries and toss them in a bowl with 2 tablespoons of granulated sugar and 1 tablespoon of flour. Let this mixture sit for about 10 minutes.
  6. Once the crust is done, remove it from the oven and spoon the strawberry mixture evenly over the hot crust.
  7. Crumble the remaining crust mixture over the top of the strawberries. Bake for an additional 30–35 minutes until the top is set and bubbling around the edges.
  8. Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack.
  9. In a small bowl, whisk together ½ cup powdered sugar, 1 tablespoon of cream, and ¼ teaspoon vanilla extract until smooth. Drizzle this glaze over the cooled bars.
  10. Cut into 12 equal squares and serve.
