Ingredients

  • Day-old bread (mix of white and whole grain)
  • Chicken or vegetable broth
  • Fresh sage
  • Fresh thyme
  • Fresh rosemary
  • Celery
  • Onion
  • Mushrooms (optional)
  • Carrots (optional)
  • Olive oil or butter for sautéing
  • Eggs (or flax eggs: 1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • Shredded cheddar or parmesan (optional)
  • Nutritional yeast (for dairy-free version)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut your bread into small cubes and spread them out on a baking sheet. Toast them in the oven for about 10 minutes until slightly crispy.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add diced onion and celery, cooking until soft and translucent, about 5-7 minutes. If you're adding mushrooms, toss them in now until they release their moisture.
  4. In a large mixing bowl, combine the toasted bread cubes, sautéed veggies, chopped herbs, and any additional ingredients like cheese. Mix well.
  5. Gradually stir in the broth until the mixture is moist but not soggy. Then, add the eggs (or flax eggs) and mix until everything is well combined.
  6. Using your hands, take a scoop of the mixture and form it into balls about the size of a golf ball. Place them on a greased baking sheet, leaving space between each one.
  7. Bake the stuffing balls in the preheated oven for 25-30 minutes, or until they are golden brown and slightly crispy on the outside.
  8. Once done, let them cool for a few minutes before serving.
