Delicious Toffee Cookies Recipe – Easy and Irresistible!

  • 1 cup brown sugar
  • ½ cup granulated sugar

  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking soda, and a pinch of salt. Set this aside.
  4. In a large mixing bowl, beat together 1 cup of softened unsalted butter, 1 cup of brown sugar, and ½ cup of granulated sugar until light and fluffy, about 3-4 minutes.
  5. Beat in 2 large eggs, one at a time, followed by 1 teaspoon of vanilla extract. Mix until well combined.
  6. Gradually add the dry flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
  7. Gently fold in 1 cup of toffee bits, ensuring they're evenly distributed throughout the dough.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown but the centers still look slightly underbaked.
  10. Once baked, remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
