  • 1 teaspoon granulated sugar
  • 1 teaspoon instant yeast
  • 1 1/2 cups warm water (105-115°F)
  • 2 tablespoons good quality extra virgin olive oil
  • 46 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large mixing bowl, combine the warm water and granulated sugar. Sprinkle the instant yeast over the top. Give it a gentle stir and let it sit for 5-10 minutes until foamy.
  2. While the yeast is activating, in a separate bowl, whisk together the all-purpose flour and salt.
  3. Pour the activated yeast mixture and the olive oil into the bowl with the flour mixture. Mix until a shaggy dough forms and no dry streaks of flour remain.
  4. Add the finely minced fresh garlic and chopped fresh herbs to the dough. Gently fold and squish the dough a few times to evenly distribute the garlic and herbs.
  5. Cover the bowl tightly with plastic wrap or a clean kitchen towel. Let the dough rise for 1.5 to 2 hours, or until it has roughly doubled in size.
  6. About 30 minutes before your dough finishes rising, place your empty Dutch oven (with its lid) into your oven. Preheat your oven to 450°F (232°C).
  7. Once the dough has risen, lightly flour a clean work surface. Gently turn the dough out onto the floured surface and shape it into a round ball.
  8. Carefully remove the hot Dutch oven from the oven. Transfer the dough into the Dutch oven, either directly or using parchment paper.
  9. If desired, score the top of the dough with a sharp knife or bread lame.
  10. Place the lid back on the Dutch oven and return it to the preheated oven. Bake for 30 minutes.
  11. After 30 minutes, remove the lid and continue baking for another 15-20 minutes until the crust is golden brown and sounds hollow when tapped.
  12. Remove the Dutch oven from the oven and transfer the bread to a wire cooling rack. Let it cool for at least 1-2 hours before slicing.
