Instructions

  1. Preheat your oven to 400°F (200°C) and line a 12-cup standard muffin tin with paper liners or grease it thoroughly.
  2. In a large mixing bowl, whisk together the rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, ground cinnamon, nutmeg, and salt until well combined.
  3. In a separate medium bowl, whisk together the milk, egg, and melted oil (or butter) until smoothly incorporated.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined, avoiding overmixing.
  5. Fold in the drained raisins until evenly distributed throughout the batter.
  6. Divide the batter evenly among the 12 prepared muffin cups, filling each cup about two-thirds full.
  7. Bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
