Instructions

  1. First, gently pat the chicken breasts and/or thighs dry with paper towels. Season them generously with salt, black pepper, and poultry seasoning. Finely chop the yellow onion and mince the garlic.
  2. Place the seasoned chicken pieces directly into the bottom of the slow cooker. Scatter the chopped onion and minced garlic evenly around and over the chicken. Pour in the low-sodium chicken broth, ensuring the chicken is mostly submerged.
  3. Set the slow cooker to the 'low' setting for 4-5 hours or the 'high' setting for 2.5-3.5 hours until the chicken is incredibly tender and easily shreddable.
  4. Once the chicken is cooked through and falling apart, carefully remove it from the slow cooker using tongs or a slotted spoon and transfer it to a large bowl. Shred the chicken into bite-sized pieces.
  5. Whisk together a cornstarch slurry: typically 3-4 tablespoons of cornstarch with an equal amount of cold water or extra chicken broth until completely smooth and lump-free.
  6. With the slow cooker still on, slowly pour the cornstarch slurry into the hot liquid, whisking continuously to prevent lumps. Continue to whisk gently until the gravy begins to thicken to the desired consistency.
