Easy Sweet Hawaiian Crockpot Chicken: Delicious Dinner Idea

This Sweet Hawaiian Crockpot Chicken is a hassle-free dish that brings tropical flavors straight to your kitchen. Enjoy tender chicken slow-cooked in a sweet and savory sauce, perfect for busy weeknights or family gatherings.

Ingredients

  • Boneless, Skinless Chicken Thighs or Breasts
  • Canned Crushed Pineapple (undrained)
  • Low-Sodium Soy Sauce
  • Brown Sugar
  • Fresh Ginger (grated or minced)
  • Fresh Garlic (minced)
  • Rice Vinegar
  • Cornstarch (optional)

Instructions

  1. Prepare Your Chicken: First things first, grab your boneless, skinless chicken (thighs or breasts). I usually give them a quick pat dry with paper towels. You can leave them whole or cut larger pieces in half if you prefer smaller portions or want them to cook a little faster. Place the chicken directly into the bottom of your crockpot. No need to sear anything beforehand – that’s the beauty of slow cooking!
  2. Whisk Together the Hawaiian Sauce: In a medium bowl, combine the entire can of crushed pineapple (including all that delicious juice!), the low-sodium soy sauce, brown sugar, grated fresh ginger, minced fresh garlic, and rice vinegar. Give everything a good whisk until the brown sugar is fully dissolved and all the ingredients are well combined.
  3. Pour Over the Chicken: Once your sauce is ready, simply pour it evenly over the chicken in the crockpot. Make sure the chicken is mostly submerged or well coated.
  4. Set Your Crockpot and Cook: Place the lid on your crockpot. For a slower cook: Set it to LOW for 6-8 hours. For a faster cook: Set it to HIGH for 3-4 hours. The chicken is done when it's easily shredded with two forks.
  5. Shred the Chicken: Once the cooking time is complete and the chicken is perfectly tender, carefully remove the chicken pieces from the crockpot and transfer them to a shallow dish or cutting board. Using two forks, shred the chicken into bite-sized pieces.
  6. Thicken the Sauce (Optional but Recommended): In a small bowl, whisk together 2 tablespoons of cornstarch with 3-4 tablespoons of cold water to create a smooth slurry. Pour this cornstarch slurry into the sauce remaining in the crockpot. Stir well, then replace the lid and cook on HIGH for an additional 15-20 minutes, or until the sauce has visibly thickened.
  7. Return Chicken and Serve: Once the sauce is thickened, return the shredded chicken to the crockpot and stir to coat it thoroughly with the rich Hawaiian sauce. Let it warm through for a few minutes. Serve your Sweet Hawaiian Crockpot Chicken hot over a bed of fluffy white rice, brown rice, or even quinoa.
