  • 1 pound raw, peeled, and deveined shrimp (preferably large or jumbo size)
  • 23 medium zucchinis (for zucchini noodles)
  • 46 cloves fresh garlic, finely minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • Juice of 1 fresh lemon
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Prep all ingredients: peel and devein shrimp if necessary, pat them dry, spiralize zucchini, mince garlic, chop herbs, and measure butter and olive oil.
  2. Heat a large skillet or non-stick pan over medium-high heat. Add olive oil and half of the butter. Once melted and sizzling, add shrimp in a single layer, season with salt and pepper, and cook for 1-2 minutes per side until pink and opaque. Transfer shrimp to a plate and set aside.
  3. In the same pan, add remaining butter and more olive oil if needed. Once melted, add minced garlic and sauté for 30-60 seconds until fragrant, being careful not to brown it.
  4. Add zucchini noodles to the pan with garlic butter and toss gently to coat. Cook for 2-3 minutes until slightly softened but still tender-crisp.
  5. Return cooked shrimp to the pan, squeeze in lemon juice, and add red pepper flakes if using. Toss gently to combine and warm through. Stir in most of the fresh herbs, saving some for garnish.
  6. Serve immediately, garnished with remaining herbs and a sprinkle of Parmesan cheese if desired.
