Ingredients

  • Large, peeled, and deveined shrimp
  • Fresh zucchini
  • Cooked jasmine or basmati rice
  • Freshly grated Parmesan cheese
  • Fresh minced garlic
  • Fresh parsley or basil
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the zucchini in half lengthwise and use a spoon to scoop out the seeds, creating little boats for your rice mixture.
  2. In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add minced garlic and sauté until fragrant, about 30 seconds. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Season with salt, pepper, and a sprinkle of red pepper flakes if you like some heat.
  3. In a large bowl, mix the cooked rice with the sautéed shrimp, half of the grated Parmesan cheese, and fresh herbs. Stir until well combined.
  4. Spoon the shrimp and rice mixture into the hollowed zucchini halves, packing them gently to ensure they hold their shape.
  5. Sprinkle the remaining Parmesan cheese over the top of each filled zucchini boat.
  6. Place the stuffed zucchini cups on a baking sheet and bake for about 20-25 minutes, or until the zucchini is tender and the cheese is melted and golden.
  7. Remove from the oven, let them cool for a few minutes, and garnish with more fresh herbs before serving. Enjoy your deliciously cheesy and satisfying rice cups!
