  • 8 large eggs
  • 2 cups sharp or medium cheddar cheese, shredded
  • 4 cups day-old or slightly stale bread, cut into 1-inch cubes
  • 2 cups whole milk or cream
  • 1 finely diced onion
  • 1 cup diced bell peppers (any color)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • a pinch of dried mustard powder

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Spread half of the cubed bread evenly across the bottom of the prepared baking dish.
  3. Sprinkle half of the diced beef ham over the bread, followed by half of the diced onions and bell peppers, and about a third of the shredded cheese.
  4. Repeat the layering process with the remaining bread, beef ham, onions, and bell peppers, holding back a good portion of the cheese for the top.
  5. In a large bowl, crack the eggs and add the milk (or cream), salt, black pepper, garlic powder, onion powder, and dried mustard powder. Whisk until smooth and well combined.
  6. Pour the egg mixture evenly over the layered ingredients in the baking dish, ensuring all the bread cubes get soaked.
  7. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or ideally, overnight.
  8. Uncover the dish and sprinkle the remaining shredded cheese generously over the top.
  9. Bake in the preheated oven for 45-60 minutes until puffed up, golden brown on top, and a knife inserted into the center comes out clean.
  10. Let the casserole rest for about 5-10 minutes before slicing and serving.
