  1. Prep Your Ingredients: Gather and chop everything. Slice your beef-based Cajun sausage into 1/2-inch rounds. Dice your onion, celery, and green bell pepper. Mince your garlic. If using fresh okra, slice it into 1/2-inch pieces.
  2. Brown the Sausage: Heat a tablespoon of oil over medium-high heat in a large heavy-bottomed pot or Dutch oven. Add your sliced beef-based Cajun sausage and cook, stirring occasionally, until browned on both sides, about 5-7 minutes. Remove the sausage with a slotted spoon and set it aside.
  3. Sauté the Holy Trinity: Reduce the heat to medium. Add the diced onion, celery, and green bell pepper to the pot. Cook, stirring occasionally, until the vegetables soften and become translucent, about 8-10 minutes.
