Instructions

  1. Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, mash your very ripe bananas thoroughly with a fork until mostly smooth with a few small lumps remaining.
  3. To the mashed bananas, add the melted butter (or oil), granulated sugar (and brown sugar, if using), eggs, and vanilla extract. Whisk until well combined and smooth.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt until there are no lumps.
  5. Pour the dry ingredients into the wet ingredients and mix gently until just combined, being careful not to overmix.
  6. Divide the batter evenly among the 12 prepared muffin liners, filling each about two-thirds full.
  7. In a small bowl, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon and stir well.
  8. Generously sprinkle the cinnamon sugar mixture over the top of each muffin.
  9. Place the muffin tin into your preheated oven and bake for 5 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for another 15-18 minutes until a toothpick comes out clean.
  10. Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
