Ingredients

Scale
  • 2 cups cooked shredded chicken
  • Buffalo sauce (about 1/4 cup, adjust to taste)
  • 68 strips beef bacon, cooked and crumbled
  • Mozzarella pearls or ½-inch cubes of mozzarella cheese
  • Refrigerated crescent roll dough or pizza dough
  • Ranch or blue cheese dressing (for serving)
  • Green onions (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Cook your beef bacon until crispy, then crumble it into small pieces.
  3. In a medium-sized bowl, combine the cooked, shredded chicken with buffalo sauce until thoroughly coated.
  4. Unroll the dough on a lightly floured surface. If using crescent roll dough, separate it into triangles. If using pizza dough, roll it out and cut into squares.
  5. Place a small spoonful of the buffalo chicken mixture near the wider end of the dough piece or in the center of a square.
  6. Add one mozzarella pearl or a ½-inch cube of mozzarella cheese on top of the chicken mixture.
  7. Sprinkle crumbled beef bacon over the chicken and cheese.
  8. For crescent rolls, bring the wider ends of the dough over the filling and pinch to seal. For pizza dough, bring the corners up and pinch together to form a ball.
  9. Place the assembled bombs seam-side down on the baking sheet, leaving space between each one.
  10. Optional: Whisk one egg with a tablespoon of water and brush the tops of each bomb before baking.
  11. Bake for 12-18 minutes until golden brown and the cheese is melted.
  12. Let cool for a minute, garnish with green onions, and serve with ranch or blue cheese dressing.
