Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the cream cheese filling by beating the softened cream cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth.
  10. Once the cookies are completely cool, spread a generous amount of cream cheese filling on the flat side of one cookie and sandwich it with another cookie.
