Instructions

  1. Prepare Your Mozzarella: If you're using a block of mozzarella, slice it into sticks approximately 3-4 inches long and ½ inch thick. Pat the sticks very dry with paper towels.
  2. Set Up Breading Stations: In a shallow dish, add the all-purpose flour. In a second shallow dish, whisk the eggs with a tablespoon or two of water or milk until well combined. In a third shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, dried parsley, dried oregano, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well.
  3. Bread the Mozzarella Sticks (Double Coat!): Working with one mozzarella stick at a time, dredge it thoroughly in the flour, shaking off any excess. Dip it into the egg wash, allowing any excess to drip off. Roll it generously in the garlic Parmesan breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Repeat the egg and breadcrumb steps for a double coating.
  4. Freeze the Breaded Sticks (Do NOT Skip This!): Arrange the double-breaded mozzarella sticks in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2-3 hours, or until frozen solid.
  5. Prepare for Frying: Pour frying oil into a large pot or Dutch oven, ensuring there's at least 3-4 inches of oil. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  6. Fry the Mozzarella Sticks: Carefully lower 3-4 frozen mozzarella sticks into the hot oil. Fry for 2-4 minutes, turning occasionally, until golden brown and crispy.
  7. Drain and Serve: Remove the cooked mozzarella sticks from the oil and place them on a wire rack set over a baking sheet lined with paper towels. Sprinkle with extra salt if desired and serve hot with your favorite dipping sauce.
