Ingredients

  • Shredded Chicken
  • Jalapeños
  • Cream Cheese
  • Cheddar Cheese
  • Tortillas
  • Enchilada Sauce
  • Green Onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, softened cream cheese, diced jalapeños, and half of the shredded cheddar cheese. Mix well until everything is combined and creamy.
  3. Take a tortilla and spoon some of the chicken mixture down the center. Roll it up tightly and place it seam-side down in a greased 9×13 inch baking dish. Repeat until all the filling is used.
  4. Pour the enchilada sauce over the rolled tortillas, making sure to cover them evenly. Sprinkle the remaining cheddar cheese on top.
  5. Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  6. Once out of the oven, sprinkle chopped green onions on top for added freshness and flavor.
  7. Let the enchiladas cool for a few minutes before serving. They pair beautifully with sour cream or guacamole on the side.
