  • Yukon Gold, red potatoes, or small baby potatoes (cut into 1-inch pieces)

Instructions

  1. Preheat your oven to 400°F (200°C). While it's heating, wash and pat the potatoes dry, then cut them into roughly 1-inch pieces.
  2. In a large bowl, toss the cut potatoes with 2 tablespoons of olive oil, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of garlic powder, ½ teaspoon of smoked paprika, and a few sprigs of fresh rosemary or thyme. Spread the seasoned potatoes in a single layer on a large baking sheet and roast for 20 minutes, then flip and continue roasting for another 15-20 minutes until golden brown and crispy.
  3. While the potatoes roast, pat the steak cubes dry with paper towels and season them generously with salt, black pepper, and optional garlic powder or steak rub.
  4. Heat a large, heavy-bottomed skillet over high heat and add 1 tablespoon of olive oil. Once shimmering, add half of the steak bites in a single layer and cook for 1-2 minutes per side until browned. Remove to a plate and repeat with the remaining steak bites, adding more oil if needed.
  5. For flavor boost, reduce heat to medium, add 2 cloves of minced garlic and 1 tablespoon of fresh thyme or rosemary leaves to the pan. Sauté for about 30 seconds, then pour in ¼ cup of beef broth and scrape up any browned bits. Let simmer for a minute until slightly reduced.
  6. Return all the seared steak bites to the pan with the sauce, tossing to coat. Remove from heat and serve alongside the roasted potatoes, garnished with fresh chopped parsley.
