This Low Carb Philly Cheesesteak Casserole brings all the classic flavors of a Philly cheesesteak into a hearty, low-carb dish. It’s simple enough for a busy weeknight yet impressive enough to serve to guests.

  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup sliced mushrooms (cremini or white button) – optional
  • 1 cup cream cheese, softened
  • 1 cup unsalted beef broth
  • 1 cup shredded provolone cheese (plus more for topping)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Splash of Worcestershire sauce (low-carb if strict)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Thinly slice the beef against the grain, or prepare ground beef if using.
  3. Thinly slice the onions and green bell peppers, and slice mushrooms if using.
  4. Heat a large skillet over medium-high heat. Add olive oil and sear the beef in batches until browned, about 1-2 minutes per side. Season with salt and pepper. Remove from the pan and set aside.
  5. If using ground beef, add it to the skillet and cook until fully browned. Drain excess grease and season with salt, pepper, and a pinch of garlic powder.
  6. In the same skillet, reduce heat to medium and add sliced onions and bell peppers (and mushrooms if using). Cook until softened and slightly caramelized, about 8-10 minutes. Season with salt, pepper, garlic powder, and onion powder.
  7. In a separate saucepan over medium heat, combine softened cream cheese with beef broth, whisking until smooth. Stir in shredded provolone cheese until melted and incorporated. Add a splash of Worcestershire sauce and adjust seasonings as needed.
  8. Combine the cooked beef with sautéed vegetables in the skillet, then pour the creamy cheese sauce over and stir until well combined.
  9. Transfer the mixture to the prepared baking dish and spread evenly. Layer remaining provolone cheese (or a mix of provolone and mozzarella) on top.
  10. Bake in the preheated oven for 20-25 minutes, until bubbly and golden brown on top.
  11. Let the casserole rest for 5-10 minutes before serving.
