Blueberry Blondies

  • ½ cup white chocolate chips
  • 1 cup granulated sugar

Instructions

  1. Melt the unsalted butter in a saucepan over medium heat for about 3-4 minutes. Stir occasionally until fully melted and bubbling slightly, then remove from heat.
  2. While the butter is melting, combine the white chocolate chips in a measuring cup or bowl. This will ensure they melt evenly when the butter is added.
  3. Pour the melted butter over the white chocolate chips and let the mixture sit for 5 minutes. This resting period allows the chips to soften and melt properly when whisked.
  4. After 5 minutes, whisk the butter and chocolate mixture together until smooth and fully combined. Allow it to cool for about 30 minutes, or until it thickens slightly.
  5. Preheat your oven to 350 °F and position the oven rack in the center. Line an 8×8 inch baking pan with parchment paper and spray with non-stick cooking spray to prevent sticking.
  6. In a large mixing bowl, combine the cooled butter-chocolate mixture with 1 cup of granulated sugar. Whisk together for 1-2 minutes until fully incorporated, and the mixture appears glossy.
  7. Add in ½ teaspoon of vanilla extract and the 2 eggs, whisking until fully combined. The mixture should be smooth and slightly thickened.
  8. Gently fold in 1 cup of all-purpose flour and ½ teaspoon of salt using a silicone spatula. Mix just until the flour is incorporated; be careful not to overmix, as this can lead to dense blondies.
  9. Next, add in the ½ cup of fresh blueberries, folding them in gently to prevent them from breaking apart and coloring the batter.
