  • 8 ounces (226g) cream cheese, softened
  • ½ cup (100g) granulated sugar

  • 1 large egg
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) heavy cream
  • 1 cup (150g) assorted mini chocolate eggs (e.g., Cadbury Mini Eggs, chocolate-covered almonds, etc.)
  • Optional: whipped cream for garnish
  • Optional: chocolate shavings for garnish

Instructions

  1. Preheat your oven to 325°F (163°C). In a mixing bowl, combine 1 cup of graham cracker crumbs, 2 tablespoons of granulated sugar, and 4 tablespoons of melted unsalted butter. Mix until the crumbs are evenly coated. Press this mixture into the bottom of a greased mini muffin tin, filling each cup about halfway. Bake for 5-7 minutes until set.
  2. In another bowl, beat 8 ounces of softened cream cheese with ½ cup of granulated sugar and 1 teaspoon of vanilla extract using an electric mixer until smooth and creamy, about 2-3 minutes. Add 1 large egg, ½ cup of sour cream, and ¼ cup of heavy cream, mixing until everything is well combined and creamy, about another 2 minutes.
  3. Carefully spoon the cheesecake filling into the prepared crusts, filling each cup almost to the top. Gently tap the muffin tin against the counter to release any air bubbles.
  4. Bake in the preheated oven for 15-18 minutes. They are done when the edges are set, but the centers may still have a slight jiggle.
  5. Remove the muffin tin from the oven and let the cheesecake bites cool in the pan for 10 minutes. Then, carefully transfer them to a wire rack to cool completely. Once cooled, top each cheesecake bite with assorted mini chocolate eggs. If desired, add a swirl of whipped cream or sprinkle with chocolate shavings for extra flair.
