  • 1 wheel of ripe Brie cheese
  • Honey, for drizzling
  • 1 large egg, for egg wash
  • 1 tablespoon water or milk, for egg wash

  • Optional: dried cranberries or finely chopped apricots
  • Optional: fresh thyme or rosemary
  • Optional: fresh black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare your egg wash by whisking one large egg with a tablespoon of water or milk in a small bowl. Set aside.
  3. Unroll the thawed puff pastry sheet onto a lightly floured surface and cut it into even squares, about 4×4 inches.
  4. Cut the Brie into wedges or slices, aiming for pieces that are roughly 1 to 1.5 inches thick.
  5. Place one Brie wedge in the center of each puff pastry square. Add any optional ingredients on top of the Brie if desired.
  6. Bring the four corners of the pastry square up and over the Brie, pinching the edges together to seal them securely.
  7. Transfer the assembled parcels to the prepared baking sheet and brush the tops and sides with the egg wash.
  8. Bake for 18-22 minutes, or until the pastry is golden brown and the Brie is melted and bubbling.
  9. Remove from the oven and let cool for a minute or two before drizzling warm honey over each parcel. Serve warm.
