Instructions

  1. Pat your chicken pieces thoroughly dry with paper towels and season generously with salt, black pepper, paprika, onion powder, garlic powder, and dried thyme.
  2. Heat a large pot or Dutch oven over medium-high heat and add a couple of tablespoons of cooking oil. Sear the chicken pieces skin-side down for about 5-7 minutes per side until golden brown. Remove and set aside.

  6. Return the seared chicken pieces to the pot, ensuring they are mostly submerged in the gravy. Cover and cook on low for 45 minutes to 1 hour until tender.
  7. Remove the chicken and stir uncooked rice into the simmering gravy. Add more broth if needed to cover the rice. Bring to a boil, then reduce heat, cover, and cook for 15-20 minutes until rice is tender.
  8. Fluff the rice with a fork and return the chicken on top or shred some into the rice. Taste and adjust seasonings if necessary.
