Instructions

  1. First things first, let's get those vegetables ready. Finely dice one large yellow onion and one green bell pepper. If using mushrooms, slice about 8 ounces of them thinly.
  2. Heat a large skillet or a Dutch oven over medium-high heat. Add the lean ground beef and break it up with a spoon. Cook until fully browned, about 5-7 minutes. Drain off any significant grease if necessary.
  3. Reduce the heat to medium. Add the diced onion and green bell pepper (and sliced mushrooms, if using) to the skillet with the beef. Cook, stirring occasionally, for about 8-10 minutes, until the onions are softened and translucent, and the peppers are tender-crisp.
