  • 1 cup Granulated Sugar
  • 3 Large Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup Milk

  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Almond Extract
  • 1/2 cup Shelled Pistachios, roughly chopped

  • 1 cup Powdered Sugar
  • 12 tablespoons Milk
  • 1/2 teaspoon Almond Extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and lightly flour a standard 9×5-inch loaf pan.
  2. In a large mixing bowl, combine all-purpose flour, granulated sugar, instant pistachio pudding mix, baking powder, baking soda, and salt. Whisk to thoroughly combine.
  3. In a separate medium bowl, whisk together eggs, vegetable oil (or melted butter), milk, and almond extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently mix until just combined, being careful not to overmix.
  5. Fold in the chopped shelled pistachios.
  6. Pour the batter into the prepared loaf pan and tap it gently on the counter to settle the batter.
  7. Bake in the preheated oven for approximately 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
