  • 1 tablespoon water
  • For the Rice and Toppings:
  • 2 cups jasmine rice or white rice
  • 4 cups water (for cooking rice)
  • 1 tablespoon vegetable oil
  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup snap peas or broccoli florets
  • 1/4 cup green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Red pepper flakes (optional, for extra heat)

Instructions

  1. Marinate the Beef: In a medium bowl, combine the sliced beef, soy sauce, rice vinegar, sriracha, sesame oil, minced garlic, and minced ginger. Mix well to ensure the beef is thoroughly coated. Cover and let it marinate for at least 15 minutes while you prepare the other ingredients.
  2. Prepare the Rice: In a separate pot, bring 4 cups of water to a boil. Add the jasmine rice, stirring briefly. Reduce the heat to low, cover, and let simmer for 15 minutes or until the water is absorbed and the rice is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.
  3. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for about 3-4 minutes, stirring occasionally until browned and just cooked through. Avoid overcrowding the pan, as this can steam the beef instead of searing it.
  4. Add the Vegetables: Once the beef is cooked, stir in the sliced bell peppers and snap peas (or broccoli). Sauté for an additional 2-3 minutes until the vegetables are tender yet crisp. They should be bright in color, indicating they are perfectly cooked.
  5. Prepare the Honey Garlic Sauce: In a small bowl, mix together the honey, soy sauce, rice vinegar, minced garlic, minced ginger, cornstarch, and water. Pour this mixture over the beef and vegetables in the skillet. Stir well and cook for another 1-2 minutes until the sauce thickens and coats the beef and veggies beautifully.
  6. Serve: Fluff the rice with a fork and divide it into serving bowls. Top each bowl with the spicy honey garlic beef and vegetables. Garnish with chopped green onions, sesame seeds, and a sprinkle of red pepper flakes if you like it extra spicy. Enjoy immediately!
