  • 1 medium head of cabbage
  • 1 onion
  • 2 cloves of garlic (minced)
  • 1 bell pepper (red or green) (diced)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 250 ml vegetable broth
  • fresh parsley for garnish

Instructions

  1. Start by preparing your ingredients. Finely chop the onion and garlic, and dice the paprika. Cut the cabbage into thin strips. This prep should take about 5 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chopped onion and sauté for 3-4 minutes until they become translucent and fragrant.
  3. Add the garlic and sauté for an additional 1 minute, being careful not to let it burn as it can turn bitter. You want it to be aromatic and slightly golden.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, stirring occasionally until the meat is browned and no longer pink.
  5. Sprinkle in 1 teaspoon of paprika, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix well to coat the beef evenly with the spices.
  6. Now add the prepared cabbage to the skillet, stirring it into the beef mixture. Cook for about 5 minutes until the cabbage is tender but still slightly crisp.
  7. Pour in 250 ml of vegetable broth and bring the mixture to a simmer. Let it cook uncovered for another 5 minutes, allowing the flavors to meld and the broth to reduce slightly.
  8. Once the broth has thickened a bit, taste and adjust seasoning if necessary. If you prefer more flavor, add more salt or paprika.
  9. Finally, garnish with freshly chopped parsley before serving. This adds a lovely touch of color and freshness.
