  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper

  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). This ensures a hot cooking environment for crispy edges on your sausages and vegetables.
  2. In a large baking tray, combine the cubed potatoes, sliced bell peppers, onion wedges, and broccoli florets. Drizzle with half of the olive oil (2 tablespoons), then sprinkle with salt, black pepper, dried thyme, dried rosemary, and smoked paprika. Toss everything together until well coated.
  3. Make space in the center of the tray and arrange the beef sausages. Drizzle the remaining olive oil over the sausages for extra flavor. It’s important to give the sausages room to breathe; overcrowding can lead to steaming instead of roasting.
  4. Roast in the oven for 25-30 minutes. After 15 minutes, carefully stir the vegetables for even cooking. Look for the potatoes to turn golden brown and the sausages to be well-browned on the outside.
  5. When the sausages are cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are fork-tender, remove from the oven. If you like a bit more caramelization, you can broil for an additional 3-5 minutes. Just keep an eye on it to avoid burning!
  6. Once done, drizzle with balsamic vinegar (if using) for a touch of acidity, then garnish with freshly chopped parsley before serving. This adds a pop of color and freshness to the finished dish.
