  • 2 carrots, shredded

  • ⅔ cup soy sauce
  • ½ cup brown sugar

  • 16oz spaghetti (1 pound box)
  • 3 ½ cups water
  • 1 tablespoon sesame seeds

Instructions

  1. Heat a large pot over medium-high heat. Add 1 teaspoon of olive oil and let it heat until shimmering, which should take about 30 seconds. This ensures even cooking for the vegetables.
  2. Once the oil is hot, add the shredded cabbage and carrots. Sauté for about 5 minutes, stirring occasionally, until the cabbage is wilted and the carrots are tender but still vibrant in color.
  3. Reduce the heat slightly and pour in ⅔ cup of soy sauce and ½ cup of brown sugar. Add ½ teaspoon of ground mustard, 1 teaspoon of ground ginger, and ½ teaspoon of garlic powder. Stir well until the sugar is fully dissolved.
  4. Next, add 16oz of spaghetti to the pot. You can break the spaghetti in half if you prefer shorter noodles. Pour in 3 ½ cups of water, making sure the noodles are mostly submerged.
  5. Bring the mixture to a boil uncovered, then lower the heat to a simmer. Cook for 15-18 minutes. As the noodles soften, start stirring every few minutes to prevent sticking. You’ll know they are ready when they are tender yet still slightly al dente.
  6. Once the noodles are cooked through, remove the pot from heat. Sprinkle 1 tablespoon of sesame seeds into the noodles and toss to combine. The sesame seeds will provide a delightful crunch.
